The Eggplant worked out. I was really surprised, but in a really good way. The eggplant was cooked properly and who knew you can have a carbless/meatless dinner and still be happy. Really was a success. Maybe I will let him have a go at it more often.
Impressive! David is always drawn to eggplant too for some reason. He'll have to get the recipe from Jacob...it looks yummy!
