Many have asked for the tortilla recipe and I have shared or forget to so here it is. They are always most delicious hot off the comal with butter. Love it.
Tortillas
3.5 cups of flour
1/2 cup of mantequilla(lard or Crisco)
1 tsp salt
1 tsp baking soda
1.5 cups of warm water closer to hot
mix all dry items and lard then add the warm water as you mix. You ought to have a consistency that is not to sticky nor dry, just right!!!! You then kneed the dough a bit and make bolas(little round balls of dough) and toss them in a large bowl. When you are through with the little balls place a warm(hottish) wet kitchen towel over the bowl.
I always had a small bowl of flour to toss the dough balls into before rolling out. Before you begin the rolling process you need to heat a comal(or cast iron skillet). Begin rolling the tortilla into the shape you would like it then place onto your comal and allow to cook on each side briefly. You will see each side bubble a bit and that is when you know to flip. DO NOT OVER COOK YOUR TORTILLAS!!!!!!
I then place them in a basket with a kitchen towel lining the bottom and then cover with another towel. Continue until your all finished.

Where do you buy lard? Is there a taste difference between crisco and lard?
ReplyDeleteI think lard is better. YOu can get it from a butcher and i think it improves the taste
