This week we had Sunday school teachers over for planning and celebration of the new year. I decided to make dinner and thought about the easiest thing to make and in abundance.I came up with calabacitas. They are delicious and nutritious.
Here it is!!!!
What you need to feed eight
6 small yellow squash
6 small green squash
1 bag of mini yellow/red potatoes
1 jalapeno
1 cup of sharp white cheddar cheese
1/4 bunch of cilantro
4 garlic cloves
3 chicken bullion cubes
What I do is saute the garlic in olive oil then add the squash(which i cut into fours), the potatoes(cut into halves), and then add two to three inches of water to the pot, enough just to submerge the veggies(more water will come from the veggies themselves). When you add the water throw in the bullion cubes. After the veggies cook a bit I add the jalapeno and cilantro to the mix. Let the entire pot cook slowly and when the potatoes are done it is finished. I always toss in the cheese at the very end or sometimes just add to individuals bowls.
